A simple 5 ingredient dinner to say thank you for 5K followers!
Ingredients
4-6 chicken thighs, bone-in, skin on
2 lemons
1 Boursin cheese
4oz arugula
1.5lbs potatoes, baby golds or fingerlings

Olive oil
Salt
Black Pepper
Preparation
1: Preheat oven to 400 degrees Fahrenheit.
2: Slice potatoes in half, drizzle with olive oil, and season with salt and black pepper.
3: In a bowl combine ¾ of the Boursin with the zest and juice of 1 lemon.
4: Pull the skin back on the chicken thighs and rub the Boursin lemon mixture under the skin and then pull the skin back over the chicken. Season the chicken with olive oil, salt, and black pepper.
5: Bake chicken and potatoes on a sheet tray in the oven for about one hour, until golden brown and chicken is cooked to 165 degrees.
6: To a plate, add chopped arugula and dress with olive oil, salt, pepper. Add chicken and potatoes to the plate, zest the other lemon over the top, squeeze with fresh lemon juice, and top with the rest of the Boursin cheese. Enjoy!
