About the Recipe
I enjoy a blue cheese stuffed olive as much as the next person but what I really love is a dish with texture. Adding the almonds gives the olives a much needed crunch. Pouring a garlicky, black pepper olive oil over the top makes this dish undeniably savory in a very good way.
Ingredients
5-6oz green olives, pitted and drained
1oz blue cheese
2Tbsp almonds, slivered and toasted
3/4C olive oil
2Tbsp garlic, minced
1Tsp black pepper
Preparation
Stuff olives with blue cheese and slivered almonds.
In a sauté pan over medium heat, add olive oil and garlic. Cook for just a minute until fragrant, allow to come to room temperature or just slightly warm. You don't want to pour piping hot oil over the olives.
Pour over olives, eat with toasted bread. Store in the refrigerator. Enjoy!
