About the Recipe
A super easy appetizer or side dish that celebrates asparagus season!
Ingredients
2lb asparagus, ends trimmed, tops separated, and the rest sliced in coins
1 Boursin cheese, 5.2oz
1 pie crust, rolled out +flour to roll
1 egg, whisked
1 lemon, zested
1/4C Parmesan cheese, shredded
Salt
Black Pepper
Preparation
1: Preheat oven to 375 degrees Fahrenheit.
2: Roll out pie dough on a floured surface and transfer to a parchment lined baking sheet.
3: Sprinkle Boursin cheese over pie dough, leaving a 1-inch perimeter. Gently push the coins into the cheese so that it all fits, season with salt and pepper. Arrange the tops in a decorative design. Fold over the border and brush with an egg wash and season the border with black pepper.
 4: Bake galette for 45 minutes-1 hour until edges are golden brown.
5: Right before serving, top with parmesan cheese and lemon zest. Enjoy!
