About the Recipe
I feel like kofta is the perfect way to transform ground meat into something, almost luxurious. It creates such incredible flavor, yet it is so simple to put together.
Ingredients
2lbs ground chicken
2 small yellow onions, quartered
4-5 mini bell peppers or 1 large red bell pepper
3Tbsp garlic, chopped
1 handful parsley
1 handful cilantro

Spice Mixture:
2Tsp 7 spice
1Tsp cumin
1Tsp coriander
1 ½ Tsp turmeric
1/2Tsp onion powder
1/2Tsp granulated garlic
1 ½ Tsp smoked paprika
½ Tsp black pepper
1 ½ Tsp kosher salt
Preparation
Combine all of the spices and set aside.
In a food processor combine onion, peppers, garlic, parsley, and cilantro. You don't want it too chunky or smooth, something right in the middle is good. Slight texture.
Combine the onion mixture with the ground chicken and put in the refrigerator for at least one hour to firm up. Once chilled, form them into little patties. I like to use olive oil to prevent them from sticking to my hands, plus this helps them brown in the oven.
Once you're ready to bake, preheat your oven to 400 degrees Fahrenheit. Bake them for 20-25 minutes and broil for another 5-10 minutes. Watch them closely when broiling. Internal temperature should reach 165 degrees.
Enjoy with rice or in a pita!
