Green Chile Corn Shrimp Dip

Ingredients

Ingredients:

1lb shrimp, peeled, deveined, chopped into pieces

24oz sweet corn

2C onion, chopped

2Tbsp garlic, minced

8oz canned green chiles, diced, drained

8oz cream cheese, softened

1C mayonnaise

2C sharp cheddar, shredded

1Tsp cumin

1Tsp smoked paprika

1Tsp salt

1/2Tsp black pepper

3Tbsp olive oil

Garnishes:

Parmesan

Pickled jalapenos

Cilantro

Tortilla chips to serve

Preparation

1: Preheat oven to 400 degrees Fahrenheit

2: Whip cream cheese until fluffy. Add in mayonnaise and whip until smooth.

3: In a bowl combine, whipped cream cheese and mayonnaise with cheddar, green chiles, ½ tsp salt and ½ tsp black pepper. Set aside.

4: In a large sauté pan, over medium heat, add olive and onion, sauté until softened, a couple of minutes. Next add in sweet corn and sauté until no longer frozen, a couple of minutes. Add in garlic ,cumin, 1/2tsp salt, smoked paprika sauté for one minute. Next add in shrimp and sauté until just cooked through.

5: Add the shrimp mixture to the whipped cream cheese mixture and combine.

6: This is a large batch, and you’ll want to divide it into two smaller baking dishes, or cook it longer in a bigger pan. Top with a sprinkling of parmesan cheese and bake until bubbling, about 20-25 minutes. Once out of the oven, top with fresh cilantro and pickled jalapenos. Serve with tortilla chips. Enjoy!
