About the Recipe
Grilling season is upon us and I love grilled seafood! Shrimp grills up so quick and this sauce can be made ahead. Serve with rice or grilled vegetables as complete meal or on it's own as a great appetizer!

Ingredients
Ginger Mango Sauce:
3 alphonso mangoes (no skin or pit)
1Tbsp sugar
1 jalapeno, sliced
2 garlic cloves
2 inch knob of ginger, skin removed
2 limes, juiced
3Tbsp soy sauce
2Tbsp toasted sesame oil
1Tbsp cornstarch

Other Ingredients:
2lbs shrimp, peeled and deveined
Olive oil
Salt
Pepper
Cilantro
Mint
Preparation
1: To prepare the sauce, whisk together cornstarch with 3Tbsp of water and set aside. Put the rest of the ingredients in a blender with 1 1/2C water and blend until smooth. Strain into a sauce pot and whisk in cornstarch slurry and cook over medium heat for a couple of minutes until thickened, whisking continuously. Allow sauce to cool and set aside.
2: Skewer shrimp and drizzle with olive oil, season with salt and pepper. Grill shrimp on medium high for a couple of minutes on each side, until cooked through.
3: Serve shrimp with mango sauce, cilantro, and fresh mint.
