About the Recipe
An extremely flavorful breakfast to add to your rotation.
Ingredients
6oz Halloumi cheese, sliced and patted dry
1/4C dill
1/2C parsley
1 jalapeno, sliced
1C greek yogurt
1/4C sour cream
1/2Tsp garlic, minced
4 eggs
1 tomato, diced
1 cucumber, diced
1/2C arugula
bread
lemon
olive oil
salt
black pepper
Preparation
To make the green sauce, in a food processor, combine parsley, dill, jalapeno, 1/4tsp salt, 1/4tsp black pepper, 2tsp olive oil, and blend. Once roughly chopped, add in 1/2C greek yogurt and sour cream, blend until combined. This mixture thickens in the refrigerator.
In a saute pan over medium high heat, add 2Tbsp of olive oil. Add sliced halloumi and sear on both sides, it will get slightly brown and crispy. Take out and set aside. I like to place them on paper towel.
In the same pan, I like to add a bit more olive oil and fry eggs until desired doneness.
Assemble your bowl by adding the remaining greek yogurt to the bowl, top with halloumi, eggs, tomoato, cucumber, arugula. Drizzle the green sauce over everything. I like to eat it with warm bread. Enjoy!
* the halloumi can tend to be very salty, I underseason everything else because of this, as I eat it all together.
