About the Recipe
This is a super quick appetizer that slightly pickles the raspberries, add a lovely acidity next to creamy rich goat cheese, and is balanced with herbs and honey.
Ingredients
½ pint (6oz)  fresh raspberries
2 lemons, zest and juice
1 Tbsp honey + more for drizzling
Sprig of fresh oregano
Sprig of fresh rosemary
1Tbsp olive oil
8oz goat cheese
2Tbsp heavy cream or whole milk
1/8Tsp salt
1/8Tsp black pepper
Bread, toasted
Preparation
Directions:
1: In a shallow container whisk together lemon juice and zest with 1Tbsp honey, olive oil ,salt, and pepper. Add in the whole raspberries and the leaves of the rosemary and oregano. With your hands, gently toss everything together and set aside.
2: In a food processer, whip together goat cheese with heavy cream or milk until creamy and slightly fluffy.
3: To toasted bread, add the whipped goat cheese, top with the marinated raspberries, and drizzle with honey to finish. Enjoy! Â Â
