Roasted Sweet Potatoes with Whipped Mascarpone Blue Cheese and Celery Salad



About the Recipe

Sweet potatoes bff maple syrup mixed with some funky blue and topped with some crunchy celery.


3 medium sweet potatoes, peeled, cut into wedges

4oz mascarpone cheese

1/4C blue cheese crumbles

1Tbsp + 2Tsp milk

2Tbsp maple syrup

3 celery stalks with leaves, sliced

2Tsp sherry vinegar

Olive oil


Black pepper


1: Preheat oven to 400 degrees Fahrenheit.

2: Coat sweet potatoes in olive oil, salt, and pepper and bake for 30 minutes. Crank the oven up to 450 degrees and cook for an additional 15 minutes so that they brown nicely.

3: In a food processor whip together mascarpone, blue cheese, milk, black pepper, and 2Tbsp + 2Tsp of maple syrup. Taste for salt, it depends on how salty your cheese is.

4: In a bowl combine celery, sherry vinegar, 1Tsp maple syrup, salt, pepper, and olive oil. Toss to combine.

5: To plate add the whipped cheese to a plate, top with sweet potatoes and celery salad. Enjoy!
