Slow Roasted Chipotle Citrus Salmon



About the Recipe

This dish is incredibly easy. It all comes together in about 20 minutes! I think with rice, it would make a perfectly balanced, quick and delicious dinner.


1.25lb salmon, whole side, deboned

1/4C olive oil

1/2Tsp cumin, ground

1/2Tsp onion powder

1/2Tsp granulated garlic

1/2Tsp smoked paprika

1/2Tsp black pepper

1Tsp salt

1Tbsp honey

2Tbsp chipotle peppers in adobo, chopped

3 clementines, juice + 2 sliced for garnish if desired

1/2C cilantro leaves

2 Avocados, quartered


1: Preheat oven to 325 degrees.

2: In a bowl, whisk together olive oil, clementine juice, cumin, onion, granulated garlic, smoked paprika, black pepper, salt, honey, and chipotle.

3: Place salmon, skin side down, on a parchment lined baking sheet. Top with marinade. Bake for 12-15 minutes. The salmon will pull off the skin easily when it is done.

4: Garnish with avocado, extra sauce from the oven, extra clementines, and cilantro. Enjoy!
