About the Recipe
I recently when to Arizona to visit my mom and we drank iced matcha lattes everyday! She's hooked and so am I. This is a fun way to add color and flavor.
Ingredients
1lb strawberries, quartered
1/2C sugar
Juice ½ lemon
Pinch salt
1C heavy cream
1/3C whole milk
Matcha
Milk for latte, I used almond milk
Preparation
1: In pan combine strawberries, lemon juice, sugar, and pinch of salt. Stir to combine and cook for 15-20 minutes over medium heat. Periodically stir to make sure the fruit isn’t sticking to the bottom.
2: Once the fruit is cooked and soft, add 2-3Tbsp of water and mix. Mash with a potato masher or fork, and strain. Keep the smashed fruit for jam and the rest is strawberry syrup. You should get about 3/4C of strawberry syrup. Allow syrup to cool completely before using in your strawberry foam.
3: To make the strawberry foam combine all of the strawberry syrup with heavy cream and milk in a blender. Blend until fluffy. You can adjust this to your preference. Want less strawberry? More whipped cream consistency? Don’t use as much milk or add more whipped cream. It’s up to you.
4: Whisk together 1 serving of matcha powder with hot water. Add over ice, top with milk, and strawberry foam. Enjoy!
