About the Recipe
Tres Leches is an iconic cake from Latin America and is truly so special. I find it to be the perfect cake for all celebrations. My Egyptian partner had never had this cake until he moved to the United States and now he requests it for all of his birthday's. We recently moved his mother here and she now requests this cake too. It is guaranteed to be loved by all.
Ingredients
Cake:
1C flour
1 ½ Tsp baking powder
5 eggs, separated
1C sugar
1/3C whole milk
1Tbsp vanilla
¼ Tsp salt

Milk Mixture:
½ C heavy cream
1 14oz can sweetened condensed milk
1 12oz can evaporated milk
2Tsp vanilla

Whipped Cream:
3 ½ C heavy cream (the rest of your quart)
½ C powdered sugar
1Tbsp vanilla
Preparation
1: Preheat oven to 350 degrees Fahrenheit.
2: Grease a 9x13 pan with butter and flour.
3: In a large bowl sift together flour, baking powder, and salt.
4: In a stand mixer, cream together egg yolks, vanilla, and 2/3C sugar until pale yellow and slightly fluffy. Add in milk and combine.
5: Add egg yolk mixture to the dry ingredients until just combined.
6: In clean bowl, whip together egg whites until soft peaks, then slowly add in remaining 1/3C sugar until firm peaks have formed.
7: In batches, gently fold the whipped egg whites into the rest of the cake batter.
8: Add to the prepared dish and bake for 30-35 minutes.
9: Allow cake to come to room temperature or just slightly warm, then using a fork poke holes into the cake.
10: Whisk together all ingredients for the milk mixture.
11: Pour milk mixture over the cake, cover and put into the refrigerator.
12: Whip together all ingredients for whipped cream until firm peaks have formed.
13: Once cake has chilled, add whipped cream to the top and enjoy! In the summer I love to add fresh fruit on the side. Â Â
