About the Recipe
Persimmon and pomegranate are a breath of fresh air during the colder fall and winter months. They provide a much needed freshness, and are to be celebrated. I kept this salad very simple for that reason, to cherish what these two fruits gift us.
Ingredients
3 fuyu persimmons, sliced
1/2C greek yogurt
1/4C walnuts, toasted
3Tbsp pomegranate seeds
Handful of fresh mint leaves
Olive oil
Salt and pepper
Preparation
Add greek bowl to a wide bowl and swirl
Place sliced persimmons to on top of the greek yogurt
Top with pomegranate, mint, and walnuts
Drizzle with olive oil, season with salt and pepper
