Winter Persimmon Salad

About the Recipe

Persimmon and pomegranate are a breath of fresh air during the colder fall and winter months. They provide a much needed freshness, and are to be celebrated. I kept this salad very simple for that reason, to cherish what these two fruits gift us.

Ingredients

3 fuyu persimmons, sliced

1/2C greek yogurt

1/4C walnuts, toasted

3Tbsp pomegranate seeds

Handful of fresh mint leaves

Olive oil

Salt and pepper


Preparation

  1. Add greek bowl to a wide bowl and swirl

  2. Place sliced persimmons to on top of the greek yogurt

  3. Top with pomegranate, mint, and walnuts

  4. Drizzle with olive oil, season with salt and pepper
